Quesadilla with Blue Cheese, Bacon, & BBQ Recipe

The Beachcomber at Crystal Cove has a flat bread pizza we love. We have tweaked the ingredients and made it one of our favorite foods to take to the beach. The Quesadilla style makes it easy to eat at the beach. Yummm!

Ingredients

  • 1/2 Cup Favorite BBQ Sauce (Our favorite is Sweet Baby Rays)
  • 1 Cup Monterrey Cheese 
  • 1/2 Cup Blue Cheese
  • 1 pound Bacon
  • 1/4  Sun Dried Tomatoes
  • 1/2 Red Onion
  • 1/4 Cup Olive Oil
  • 4 Stalks of Green Onions
  • 4 Large Flour Tortilla

Directions

  • Chop Bacon and fry until crispy , put to the side.
  • Saute Red Onion and Sun Dried Tomatos in Olive Oil then mix with bacon.
  • Toast tortilla and spread bbq sauce on one side
  • Add Blue Cheese , Bacon Mixture, Chopped Green Onion, and Cheese.
  • Place in oven at 350 degrees for ten minutes
